Bone Broth Rice: A Simple Savoury Side Dish

Rice can carry a lot more flavour than plain water gives it. This is an easy way to make a savoury side dish for roast vegetables, grilled meat or whatever is in the fridge.

Use a prepared cup of Best Bone Broth concentrate as part of the cooking liquid. The rice picks up flavour as it cooks, rather than needing a lot of extras at the end.

Ingredients

Serves 4.

  • 1 tablespoon olive oil or butter
  • 1 small onion, finely diced
  • 250g long-grain rice
  • 1 tablespoon Best Bone Broth concentrate
  • 600ml hot water
  • Black pepper
  • Chopped parsley or spring onion, optional

Method

Heat the oil in a saucepan over a medium heat. Add the onion and cook for five minutes until soft. Add the rice and stir for a minute so every grain gets coated.

Mix the concentrate with the hot water. Pour it into the pan, add a little black pepper, then bring it to a gentle boil. Put the lid on, turn the heat low and leave it for 12 minutes. Do not keep lifting the lid.

Take the pan off the heat and leave it covered for another 10 minutes. Fluff the rice with a fork and add herbs if you like.

Easy ways to use it
